Zoodles! Zucchini “noodles”– gluten free and low carb– and you’ll swear that you’re eating spaghetti!

If you’re looking for an easy way to incorporate more veggies into your (or your kids’) diet– or if you’re gluten free and do NOT like gluten-free noodles– this is IT! Fast to prepare and you will swear that you’re eating noodles. This is also ideal for anyone who is avoiding gluten, calories, and/or carbs– it’s seriously just AHmazing (even if you don’t normally like zucchini!)

You can use this recipe to season up this “zoodles” however you like— add pesto, tomato sauce, grated cheese– whatever floats your boat.

PS The key to this recipe is to ‘sweat’ the zucchini prior to cooking them (that process removes some of the water from the zucchini)– it might be tempting to skip this step but don’t, it’s absolutely crucial– if you don’t remove the water prior to cooking, you’ll have a soggy un-noodle-y mess instead of something that noodle-y!

INGREDIENTS:

1 lb fresh zucchinis

1-2 tbs salt (don’t worry, you’ll be rinsing it off!)

1 tsp cooking oil of your choice (I use coconut oil, but olive oil would be an excellent choice)

2-3 cloves garlic

Optional Awesomeness: grated Parmesan, sundried tomatoes, red pepper flakes– anything that you’d like your pasta topped with!

IMPLEMENTS

Julienne Peeler (find one here: http://amzn.to/NgH8qg)– alternatively, you could use a mandoline (find one here: http://amzn.to/LqJpQH) or even julienne the zukes by hand, if you’d like– my advice is to spring for either the peeler or the mandoline, it makes quick work out of zukes and other veggies. Strainer or Colander. Saute Pan.

INSTRUCTIONS

Wash the zucchinis and then julienne them. Place “zoodles” in a colander or mesh strainer, liberally salt the zukes and let them sit for 20 minutes (don’t skip this set, it’s crucial!).

After 20 minutes have elapsed, rinse and drain the “zoodles”, pat dry. Add oil to the saute pan, heat pan to medium-high and then saute up the garlic until it’s fragrant– then add the “zoodles” and saute them for 3-4 minutes.

Top with Parmesan (if desired)– serve and enjoy.

Nummy. Heaven in a Bowl.

 

It even twirls like spaghetti.
