Turkey Sliders (Baby Burgers)

2 lbs ground turkey (or ground chicken, if you prefer)
1 egg
Plain Breadcrumbs (approximately 1/2 cup), I use Panko breadcrumbs
1 Granny Smith Apple, peeled, cored and grated
1 stalk of celery, finely minced
3 cloves of garlic, finely minced
Onion Powder, to taste
Kosher Salt, to taste
Fresh Cracked Pepper, to taste
1 tsp of Chili Pepper Paste (optional)

This recipe is flexible– you can add or omit vegetables as you wish– add raw or sauteed carrots, onions, mushrooms– whatever you have on hand!

Mix all ingredients well– add breadcrumbs until the mixture is no longer very loose (the size of the egg will determine how much more– or less– breadcrumbs that you will need)– but don’t be concerned if the mixture seems quite ‘egg-y’, the burger will set up once they’re cooked.

Either form the burgers with your hands– or, I prefer to use an ice cream scoop. Preheat a lightly oiled grill pan to medium heat– and cook on both sides until the burgers hit an internal temp of 170*. Serve on lightly toasted ‘slider’ buns– and top the burgers with your favorite toppings– try baby lettuces, avocado, and/or the old stand bys of ketchup, mustand and/or mayo. Delish! Recipe makes approximately 20 sliders.
