Turkey White Bean Chili/Stew

I debated calling this a chili when it really is kind of a stew/soup– in any case, it’s SO yummy and it’s easy to make, too!  I generally avoid canned goods but there’s times that you just need to get dinner on the table FAST!

Don’t be intimidated by the long list of ingredients, in fact, if you don’t have all of the spices on hand, feel free to substitute a packet of taco seasoning instead of the spices I have listed here!

 

INGREDIENTS:

-1 tbs canola or olive oil

-3 lbs ground turkey (you can substitute ground chicken)

-8 cloves garlic, minced

-2 onions, diced

-2 cans (approximately 14 oz, each) fire roasted, diced tomatoes

-1 can (approximately 14 oz) cannelli beans (or any other white bean, drained and rinsed.)

-1 can (approximately 14 oz) of corn, drained

-2 cups turkey broth (you can substitute chicken broth)– up the broth content if you want it more like a soup or stew.

-1 tbsp paprika (I suggest Hungarian and/or smoked paprika)

-1 tbsp garlic powder (I suggest granulated garlic)

-1 tbsp onion powder

-1 tsp cumin

-1 tsp ground coriander

-1 tsp chipotle chili powder (optional– add more if you like it hot, add less or omit if you don’t like any heat– though chipotle is much more earthy and mild than cayenne)

-salt and pepper to taste

Optional awesomeness: Sliced green onion, cooked rice, cheddar or any other cheese, cilantro, sour cream, and any veggies that you like: mushrooms, zucchini, bell peppers, etc
DIRECTIONS:

Add oil to a large stockpot or wok bring up to medium-high heat, add garlic and onions.  Saute until translucent.  Add turkey and brown until no pink remains.  Add garlic powder, onion powder, cumin, coriander and chili powder and mix well.  Add rinsed and drained beans, add tomatoes (undrained!), corn and stock– bring to a boil.  Then cover and drop to a simmer.  Simmer covered for at least 10-15 minutes.  Taste and add additional seasonings as you see fit.  Serve over rice (or you can stir the rice into the chili, if you’d like!) and top with sliced green onions and/or a sprinkling of shredded cheese and a dollop of sour cream.  Enjoy!
