Sweet and sassy shrimp
Make the rub ahead of time, so it’s ready to go– it’s also great on chicken and pork. Very versatile and not spicy, just has a nice little kick– but appropriate even for little ones!
1 pound raw shrimp (peeled and deveined)
2 tbs paprika
1/2 tsp chipotle chili powder (or more or less to taste, depending on how spicy you like it!)
2 tbs brown sugar
1/4 tsp kosher salt
1/2 tsp ground cumin
1/2 tsp granulated garlic (I prefer granulated but regular garlic powder will do, too!)
1/2 tsp onion powder
2 tablespoons canola oil
1/4 cup, fresh cilantro, chopped
1 lime, cut in wedges
Peel and devein shrimp, toss with ALL ingredients (except cilantro and lime) and let marinate for 15 minutes. To cook, either saute in a medium-hot wok or large frying pan until the shrimp is cooked through and the outside ‘crust’ (from the seasoning) on the shrimp begins to caramelize and brown. (Alternatively, you can grill the shrimp– either on skewers or in a grill safe basket) Once cooked, sprinkle with fresh cilantro and squeeze lime over shrimp.
Excellent paired with mango and red onion over a salad– over serve over any rice, quinoa or couscous.
fabuLESS hint: Make the spice mix ahead of time and make a double or triple batch and store it in an airtight container so you can make this dish in no time flat!
