My world famous “stir fried” pasta

This isn’t so much a recipe as a process– it’s great for getting rid of leftovers– and it’s also a very versatile, yummy and FAST dinner for those nights that you need to get dinner done right quick!

 

Ingredients:

-fresh garlic, 2 cloves, finely minced

-1 tbs olive oil

-1 1/2 cups tomato sauce (any high quality sauce will do! You might have to adjust the amount of sauce up or down, depending on how ‘saucy’ you like your pasta)

-12 oz cooked pasta (any shape)– a box of pasta is usually around 12 oz.  It works with either freshly made pasta or pasta that was cooked a day ahead and stored in the fridge.

 

Optional:

-vegetables of your choice–onions, carrots, mushrooms are all excellent choices.

-protein of your choice– ground beef, diced chicken, shrimp, pork– whatever you have on hand!

-freshly grated Parmesan cheese

-fresh basil

 

Add 1/2 tbs olive oil to a large saute pan (or even a wok!)– at medium-high heat, saute garlic until fragrant– if you’re using veggies, add them to the pan and saute until they’re just shy of desired tenderness– then remove from pan.  Cook protein, if needed and then set aside.  Add 1/2 tbs of olive oil and add tomato sauce to the pan– at medium-high heat, stirring frequently– you want the sauce to just begin to bubble but you do NOT want it to scald/burn– just a little bit above a simmer– once the sauce has reached the desired temperature, add the cooked pasta and ‘stir fry’ it, coating the pasta with sauce (the sauce will stick to the pasta)– add veggies and protein and continue ‘stir frying’– until all ingredients are both coated in sauce and heated through.  Top with freshly grated Parmesan cheese and a few slivers of fresh basil– serve– and enjoy!
