Chicken or Pork Souvlaki

Ingredients:

 

1/4 cup olive oil

1/4 cup soy sauce

1 lemon, juiced

1 tbs dried oregano (optionally, you can use dried parsley)

4 cloves garlic, minced

3 lbs pork (any boneless cut will do), cut into 1″ cubes, you can substitute lamb or chicken (breast or thighs) instead of pork.

3 onions, cut into 1″ chunks

2 bell peppers, cut into 1″ chunks

skewers (optional!)

 

For serving:

Greek Pita (or tortillas, if you don’t have pita)

Tzatziki Sauce (recipe found here: www.livefabuLESS.com/tzatziki-sauce)

 

 

Directions:

 

Marinate pork, onions and peppers in olive oil, soy sauce, lemon juice, garlic and oregano mixture– marinate for at least 2 and up to 24 hours.  Thread pork, onions, and peppers onto skewers and barbeque on an oiled grate, turning often to cook evenly– cook for approximately 10-15 minutes or until pork is cooked through.  OR cook in a barbeque basket (the kind you would use for veggies or fish) and stir often to ensure even cooking.

You can also cook it in on the middle rack of a preheated 350* oven until the meat is lightly browned and the juices run clear

 

Would also be excellent over rice.  Enjoy!
