Pizza Dough
Ingredients:
-3 3/4 cups all purpose flour (plus more for dusting the rolling surface)
-1 1/2 tsp salt
-1 1/2 cups warm water
-1 tbs sugar
-1 packet yeast
-3 tbs olive oil (plus more to coat the dough)
Whisk flour and salt. Make a well– add water, sugar, and yeast. When foamy, mix in 3 tbs oil. Knead until smooth– roughly 5 minutes. Brush with olive oil, cover in a bowl and let rise until doubled– approximately 90 minutes. Divide into two 1-pound balls. Use one pound per recipe.
Place pizza stone or an inverted baking sheet on the lowest oven rack and preheat oven to 500* (with pizza stone inside the oven)
Stretch dough on a floured (or, alternatively, use corn meal) surface– use a pizza peel, a large wooden cutting board or parchment paper.
Top pizza as desired, then slide the pizza (with the parchment paper, if using) onto the stone or baking sheet. Bake until golden, about 15 minutes.
(I would vary slightly from the directions and prebake the dough for 4-5 minutes prior to topping it– and then continue to bake for 10 minutes)
