Oven Fritatta

Oven Fritatta Recipe.

 

This is not so much a recipe as it is a process– fritattas are SO versatile, they can utilize just about any veggies– either raw or already cooked.  The following is simply MY favorite combination, but feel free to add and/or omit any ingredients– other than the eggs and milk, of course!

 

Ingredients:

 

12 eggs

1 1/2 cups milk

salt, to taste

pepper, to taste

1/2 cup green onions, sliced thinly

1 red bell pepper, diced

1 cob of corn (raw)– kernels ONLY

6 strips bacon, cooked and crumbled

2 cups shredded cheese

 

Preheat oven to 350*.  Mix eggs, milk, salt and pepper in a bowl (a whisk works best)– pour mixture into a 13″x9″ greased (or non-stick, I prefer stonewear) pan.  Evenly distribute the crumbed bacon, sliced green onions, diced red bell pepper, and corn kernels in the pan– top mixture with 2 cups of shredded cheese.  Place in hot oven and cook for approximately 20-25 minutes or until the cheese is nicely browned and the eggs are ‘set’ (or firm)– remove, slice and serve with a spatula.  Enjoy!
