Mango Salsa
Mango salsa– it’s crisp and acidic and is perfect complement to the delicateness of fish like tilapia– it would also complement grilled chicken breast, shrimp or even beef exceedingly well.
Ingredients:
1 ripe mango: peeled, pitted, and diced
1/2 medium red onion, finely chopped
1 small cucumber, peeled, seeded and diced
3 tbsp cilantro, chopped
3 tbsp lime juice, freshly squeezed
salt and pepper, to taste
Optional Awesomeness: Add some avocado and/or some jicama.
And, this would be fabulous as a salad– just up the cucumber quotient and add some diced green, red and yellow peppers.
