INSANELY good chicken recipe
INGREDIENTS:
- 4 lbs of chicken– either whole, cut up or even just bone-in thighs, breasts, etc
-1/3 cup white vinegar
-1/3 cup canola oil
-1/4 cup granulated garlic (or garlic powder)
-1/4 cup paprika
-1/2 cup cumin
-1 tsp black pepper
-1 tsp salt
-1 lemon, juiced
DIRECTIONS:
Mix all ingredients together to form a paste. Cover the chicken, over AND under the skin AND inside the cavity (if using a whole chicken) in a thick layer of the seasoning. Place the chicken in the fridge for at least 2 and no more than 24 hours in order to marinate. (It’s best, if you have one, to use a covered casserole dish that you can marinate in– and then cook in– and then store leftovers in afterwards!)
Preheat oven to 350*, roast chicken until internal temperature reaches 165*. Please note that the skin won’t crisp up quite as much (perhaps because of the vinegar and/or lemon juice?) but (I hope!) it will be the most tender, juicy chicken that you’ve ever eaten! Enjoy!
