Honey Garlic Chicken

Ingredients:

-Chicken, 3 lbs, either bone-in or boneless, your choice

-granulated garlic powder

-salt and pepper, to taste

-1 tbsp canola oil

-10-12 cloves of garlic, minced (I use more because I *love* garlic!)

-1 cup honey

-juice of one orange

-1 1/2 tbsp soy sauce

-1 1/2 tbsp rice vinegar

Season chicken with garlic powder, salt and pepper and either roast (if bone in) or stir fry (if boneless) the chicken until the juices run clear.  In a small saucepan, heat canola oil over medium-high heat, add minced garlic and stir until fragrant, add honey, orange juice, soy sauce and rice vinegar and stir to combine– bring to a boil and then drop to a simmer (taste sauce, if sauce is too sweet, add additional rice vinegar.)  Allow to simmer for 5-10 minutes– drizzle sauce over cooked chicken.  Excellent over rice and stir fried veggies, enjoy.
