1-2 lbs of boneless/skinless chicken (thighs or breasts) OR 1-2 lbs of boneless beef (skirt steak, London Broil)
-2 limes, juiced
-1 orange, juiced
-6 cloves of fresh garlic, minced
-3 tbs soy sauce
-3 tbs olive oil
-1 tsp ground cumin
-1/4 tsp chipotle pepper powder (optional)
-freshly cracked black pepper, to taste
-12 tortillas, corn, flour or whole wheat
Mix together all ingredients (except for the chicken or beef and the tortillas) together. Slice the chicken or beef into thin, regular slices (if using beef, be sure to cut against the grain– and here’s a tip: it’s easier to cut thinner slices if the chicken or beef are VERY cold– stick them in the freezer until they’re not quite frozen. Marinate the chicken or beef for at least 2 hours and up to 12 hours.
To prepare, grill in a HOT grill pan until it has a nice char on the outside and cooked thoroughly. Heat the tortillas in 350* oven until heated through. Serve fajitas with lime slices and cilantro– plus feel free to add sauteed onions, guacamole, etc. Enjoy!
