Caesar Dressing
Ingredients:
4 cloves of garlic, minced
2 tbs of Dijon mustard
1 tbs of white vinegar
4 tbs mayonnaise
1 cup Extra Virgin Olive Oil
1 lemon, juiced
salt
pepper
2 oz of anchovies or 2 tbs anchovy paste (optional but HIGHLY recommended!)
Mince the garlic. Add garlic, mustard, a pinch of salt, and vinegar to a blender or small food processor and blend well. Add mayo and anchovies (if using) and blend again. Stream in olive oil. Season with lemon juice and pepper (if you don’t use the anchovies, add salt to taste, as well.) Serve and enjoy!
PS Do NOT fear the anchovies, they add a depth of flavor, saltiness and tang that is incredible. I didn’t think that I liked anchovies either, but I stand corrected!
