Breakfast Sandwiches (homemade “McMuffins”)
Ingredients:
12 eggs
12 English Muffins, preferably whole grain, lightly toasted
6 slices of cheddar cheese, cut into quarters (four pieces)– or use shredded cheese, your choice– oh, and PLEASE use REAL cheese, not that processed cheese-like product, thank you!
canola oil, enough to lightly grease muffin tins
Plastic wrap, small ziploc bags, or tinfoil to store completed sandwiches in
Directions:
Preheat oven to 375*. Lightly grease muffin tins (you’ll need 12)– crack one egg and put one egg into each ‘hole’, like so:
Put eggs into the oven once it has hit 375* — and simultaneously, but separately, start toasting the English Muffins in your toaster or toaster oven— and bake eggs on the center rack until the eggs have set like the ones pictured below; this took 12 minutes in my oven, but your time will vary depending on your oven, the size of your eggs, and whether you use a stoneware or metal muffin tin– you want them slightly underdone if you’re planning to freeze these as you don’t want to reheat already completely done eggs, as they’ll end up overdone once reheated– but if you’re planning to eat them immediately you’ll want them a bit more ‘well done’:
Remove the eggs (a silicone scraper/mixer works great to remove them without destroying the ‘muffin’ shape!) and place the cooked egg on a toasted English Muffin and top with 2 small pieces of cheese (I cut each slice of cheese into quarters– or fourths– with kitchen shears), like so:
Top the open face sandwich with the other piece of English muffin and seal in either plastic wrap (I used press and seal), in small ziploc bags or in tin foil, like so:
And place them into your freezer like so:
To reheat, remove wrapper and microwave for approximately 30 seconds– or defrost in the microwave and then reheat in the oven (or toaster oven) for 5ish minutes at 350* until the cheese is melted and the muffin is nice and toasty– enjoy!
Each breakfast sandwich cost me under $.50 and not only are they far less expensive than going drive through in the morning since I used whole grain English Muffins, REAL cheese and only a tiny bit of canola oil to cook the eggs, they’re not only MUCH cheaper– but they’re also MUCH healthier, too– fabuLESS!
