Easy black beans and rice
INGREDIENTS:
-2 cups cooked rice, ANY kind of rice will do: white, brown, jasmine, etc (click HERE to see how to make rice in the oven!)
-2 16 oz cans of black beans
-2 onions, thinly sliced
-5-6 cloves garlic, minced
-3 tbsp white vinegar
-1/4 tsp chipolte pepper powder
-fresh cracked black pepper, to taste
-optional: one lime, cut in wedges
-optional: cilantro, chopped
DIRECTIONS
Over medium heat, saute onions and garlic until they begin to carmelize. Add vinegar, chipolte powder, black pepper, both cans of black beans and bring to a boil– then cover and drop to a simmer. Simmer for five minutes. Add cooked rice and stir to combine. Top with chopped cilantro and garnish with lime.
