Balsamic Onion Chicken

Ingredients:

 

Bone in chicken (you can use a whole cut up chicken or just legs, thighs, breasts, etc)

Yellow onions, sliced

Onion Powder

Granulated Garlic Powder

Paprika (preferably smoked paprika)

Fresh cracked blacked pepper

Balsamic Vinegar

Canola Oil

 

Directions:

 

Preheat oven to 350*– place a layer of onions on the bottom of a rimmed pan (I use a deep roasting pan without the rack.) Generously season chicken on both sides with all dry ingredients– combine balsamic vinegar and oil in a shallow dish and brush mixture on chicken (reserve some to baste the chicken with while it roasts.)   You can also season and marinate the chicken up to 24 hours ahead of time.  Roast chicken, turning it over halfway through to ensure it’s even cooked– chicken is ready when the juices run clear and the skin is golden brown.  Enjoy!
