Baked French Toast

Ingredients:

 

1 loaf of bread, sliced into 1″ slices– best to use French bread, sour dough or other “artisan-quality” bread– “day old” bread is PERFECT for this!

4 eggs

2/3 cup milk (I use 1%, but you can use 2%, whole milk, half and half or cream)

1/2 tsp vanilla

1 stick of butter (1/4 cup; 4 oz.), melted (you can use 1/2 a stick in order to reduce the fat content)

1 tsp cinnamon

1/3 cup sugar (optional)

 

Instructions:

 

Preheat oven to 400*.  Pour melted butter into the bottom of a rectangular casserole dish– sprinkle cinnamon (and sugar, if you choose to use it) evenly on the bottom of the pan, on top of the melted butter.  Mix eggs, milk, and vanilla in a bowl or plate that is big enough and deep enough to dip the slices of bread.  Dip bread and coat with egg/milk/vanilla mixture on both sides– and place in the buttered casserole dish (it’s fine if the bread slices are “crowded” in the dish!)– bake for approximately 15-20 minutes or until golden brown. Enjoy!

 

Alternatively, you can prepare this the night before and bake in the morning and/or you can add frozen berries to the top of the toast prior to baking.
