Asian Slaw
Ingredients:
- Fresh ginger, 1 1/2″ piece, finely minced
- 1/4 cup rice wine vinegar
- 1/2 tablespoon soy sauce (use tamari if you require it to be gluten free)
- 1/2 lime, juiced
- 1 tablespoons sesame oil
- 1/2 head cabbage, red or green, sliced thin
- 1 red bell pepper, julienne (sliced fine)
- 1 yellow bell pepper, julienne (sliced fine)
- 1 serrano chile or jalapeño, remove seeds and finely minced (optional)
- 1 large carrot, grated fine with a peeler
- 3 green onions, sliced thinly
- cilantro, 1 tbs, finely chopped
- freshly cracked black pepper, to taste
Directions:
-Mix ginger, vinegar, soy sauce, lime juice, and sesame oil well. Slice vegetables and toss with vinaigrette– top with cilantro. Enjoy. Keeps well for about two days in a tightly sealed, refrigerated container.
